My Summer Watermelon Salad comes out of hiding as soon as watermelons are in season. It’s a late summer treat that serves as a gentle reminder that summer is still here, even though we can hear the first hints of school starting and pumpkin spice.

This salad of watermelon adds a sweet, crisp, and zesty taste to any summertime dish.

Advice: If you are not eating dairy, feel free to omit the feta cheese and swap it out for fresh mozzarella or goat cheese.

Components

4 cups of watermelon cubes

Two ounces of feta cheese, crumbled

1/4 cup of basil

One big tomato, cut into wedges

one cucumber, chopped

Five radishes, chopped

One-third cup of sliced red onion

Primal Kitchen® Lemon Turmeric Dressing, 3 tablespoons

Pepper and salt

Guidelines

Cut the watermelon into cubes that are ¾”–1″. Chop the radishes and cucumber, and cut the tomato into wedges.
